The rock and soil of El Pavado
The foundations of the cellar are the very rock on which the palace is built, which means that the humidity and temperature conditions remain constant throughout the year.
This, added to the darkness of the room and the absence of odours, creates an optimal situation for winemaking.
These large stones come from the paving of the courtyard, known as ‘el pavado’ of the Palace or Reales Alcázares de Tafalla, a historical place of recreation for the kings of Navarre and which was used especially in the 15th century.
In each generation, the owner of the Palacio de los Mencos was also the Warden of the Reales Alcázares de Tafalla, until its disappearance at the end of the 19th century.
